Easy Vegan Quesadillas

Quick and delightful quesadillas filled with vibrant bell peppers, onions, and vegan cheese, perfect for a satisfying meal.

  • 4 large flour tortillas (or whole wheat)
  • 1 cup shredded vegan cheese
  • 1 cup bell peppers, chopped
  • 1 medium onion, chopped
  • 1/4 cup fresh cilantro, chopped (optional)
  • 2 tsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salsa, for serving

Instructions

  1. Prepare your ingredients: Wash and chop the bell peppers and onion into bite-sized pieces.
  2. Heat olive oil: In a skillet over medium heat, add olive oil. Once warmed, add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Cook the bell peppers: Add the chopped bell peppers and cook for another 5-7 minutes until softened.
  4. Toast the spices: Sprinkle in the ground cumin and chili powder, stirring for about one minute.
  5. Prepare the tortillas: In another skillet over low heat, place one tortilla and spread half with shredded vegan cheese, topping with sautéed veggies.
  6. Cook the quesadilla: Fold the tortilla and cook for 3-4 minutes on each side until golden brown and crispy.
  7. Slice and serve: Cut the quesadilla into triangles and serve hot with salsa.

Notes

Consider adding black beans for extra protein and experimenting with different brands of vegan cheese for the best melt.
