Easy & Crispy Potato Cheese Croquettes

  • 4 golden potatoes (quartered)
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 cup cornstarch
  • 1/3 cup shredded parmesan cheese
  • 1/2 tsp pepper
  • 1 tbsp parsley (chopped)
  • 1/3 cup unsalted butter
  • 5 cloves garlic (minced)
  • 3/4 cup milk
  • 1/2 cup all-purpose flour

Instructions

  1. Boil the Potatoes: In a large pot, bring salted water to a boil and add the quartered potatoes. Cook until fork-tender, about 15 minutes. Drain and mash them until smooth.
  2. Prepare the Mixture: Add salt, garlic powder, paprika, cornstarch, parmesan cheese, and pepper to the mashed potatoes. Mix thoroughly.
  3. Make the Garlic Butter Paste: Melt the butter over medium heat, sauté minced garlic until fragrant, then stir in milk and mix in flour to form a smooth paste.
  4. Combine Ingredients: Mix the garlic butter paste with the potato mixture until smooth and creamy.
  5. Form the Croquettes: Shape the mixture into small balls or patties.
  6. Fry to Perfection: Heat oil to 350°F (175°C) and fry croquettes in batches until golden brown, about 5 minutes.
  7. Serve and Enjoy: Drain on paper towels and serve hot, garnished with parsley and parmesan.

Notes

Chill the mixture for extra crispiness; can substitute with different cheeses or bake instead of fry.
