Easy Cream Cheese Chicken

A comforting dish featuring tender chicken breasts simmered in a creamy garlic and cream cheese sauce.

  • 8 ounces cream cheese, softened
  • 2 large boneless, skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • Fresh parsley, chopped (optional, to taste)

Instructions

  1. Microwave the cream cheese until very soft, about 30 seconds to 1 minute. Cut into smaller pieces and set aside.
  2. Slice the chicken breasts lengthwise to create four cutlets. Season both sides with garlic powder, salt, and pepper.
  3. In a large skillet over medium-high heat, melt the butter with olive oil. Sear the chicken cutlets for 5-6 minutes per side until golden and check for an internal temperature of 165°F. Remove the chicken and set aside.
  4. Reduce heat to medium and sauté the chopped onion for 5-7 minutes until softened and caramelized.
  5. Add the minced garlic and cook for an additional 30 seconds, stirring constantly.
  6. Pour in the chicken broth, cream cheese, Italian seasoning, and crushed red pepper flakes. Stir continuously until a smooth sauce forms, approximately 2-3 minutes.
  7. Return the chicken to the skillet and coat it in the sauce, simmer for 1-2 minutes until warmed through. Adjust thickness with extra broth if needed.
  8. Garnish with chopped parsley if desired and serve promptly.

Notes

Make sure your cream cheese is at room temperature for a smoother sauce. Monitor the chicken’s internal temperature to avoid dryness.
