Dark Chocolate Almond Joy Truffles Filled with Toasted Almonds and Coconut

  • 2 cups sweetened shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 24 whole toasted almonds
  • 8 oz dark chocolate, chopped
  • 1 tsp coconut oil (optional)

Instructions

  1. In a medium-sized bowl, mix the sweetened shredded coconut, sweetened condensed milk, and vanilla extract until fully combined.
  2. Roll small amounts of the coconut mixture into 1-inch balls, pressing a toasted almond into the center of each ball.
  3. Place the formed truffles onto a parchment-lined baking sheet and freeze for 20-30 minutes.
  4. Melt dark chocolate in a microwave-safe bowl, optionally adding coconut oil, until smooth.
  5. Dip each truffle into the melted chocolate and return them to the parchment paper.
  6. If desired, sprinkle extra shredded coconut or crushed almonds on top before the chocolate sets.
  7. Refrigerate until the chocolate hardens, about 30 minutes, then serve.
