Crispy Roasted Cauliflower transforms humble cauliflower into a rich, flavorful side dish with a crunchy exterior and creamy cheese topping.

  • 1 large cauliflower
  • 6 tbsp olive oil
  • 1 tsp Old Bay seasoning
  • 1/2 tsp chili pepper
  • Fresh ground black pepper, to taste
  • 8 oz sharp white cheddar cheese, grated
  • 4 oz parmesan cheese, grated

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine cauliflower florets with olive oil, Old Bay seasoning, chili pepper, and black pepper. Toss until well-coated.
  3. Line a baking sheet with parchment paper and spread the seasoned cauliflower evenly.
  4. Roast for 30-35 minutes, flipping halfway through.
  5. In the last 10 minutes, sprinkle cheddar and parmesan cheese over the cauliflower and return to the oven until melted and bubbly.
  6. Remove from oven, let cool slightly, and serve warm.

Notes

Ensure cauliflower is evenly coated with oil and seasoning to avoid sogginess. Feel free to experiment with different cheese varieties.
