Cottage Cheese Ice Cream

A healthy and delicious dessert that offers the creaminess of traditional ice cream without the guilt. Perfect for summer days!

  • 16 ounces full-fat cottage cheese
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1/4 cup fruit puree (berries or mango)
  • Optional: Chocolate chips, chopped nuts, or other mix-ins

Instructions

  1. Place the cottage cheese in a fine-mesh sieve lined with cheesecloth or towel and let it drain for at least 30 minutes.
  2. Transfer the drained cottage cheese to a food processor and blend until smooth.
  3. In a bowl, whisk together heavy cream, milk, sugar, vanilla extract, and salt until dissolved.
  4. Pour the cream mixture into the blended cottage cheese and fold until combined.
  5. If using, fold in fruit puree.
  6. Cover the bowl and refrigerate for at least 4 hours or overnight.
  7. Churn the mixture in an ice cream maker according to the manufacturer’s instructions.
  8. Add desired mix-ins during the last few minutes of churning.
  9. Transfer to an airtight container and freeze for 2-3 hours or until firm.
  10. Let sit at room temperature before serving.

Notes

For a smoother texture, blend the cottage cheese longer. You can experiment with different fruit purees to modify the flavor.
