Classic Buckeye Balls

Delightful confections of creamy peanut butter and rich chocolate, perfect for festive occasions.

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 3 1/2 to 4 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil or shortening (optional)

Instructions

  1. In a large mixing bowl, combine the creamy peanut butter, softened unsalted butter, and vanilla extract. Blend until smooth.
  2. Gradually add in the powdered sugar, mixing until a thick dough forms.
  3. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Freeze the baking sheet for about 30 minutes to allow the balls to firm up.
  5. Melt the semi-sweet chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth. Optional: add coconut oil or shortening.
  6. Dip each frozen peanut butter ball in the melted chocolate, leaving the top uncoated.
  7. Place the chocolate-dipped balls back on the parchment-lined baking sheet.
  8. Chill in the refrigerator for 20-30 minutes until the chocolate is set and firm.
  9. Smooth out any imperfections before serving, if necessary.

Notes

For a shiny chocolate finish, add coconut oil when melting the chocolate.
