Cinnamon Coffee Crinkles

Delicious soft and chewy cookies infused with aromatic cinnamon and rich coffee flavors, perfect for any occasion.

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons instant coffee granules
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1/4 cup granulated sugar for rolling
  • 1/4 cup powdered sugar for rolling

Instructions

  1. Whisk together flour, cinnamon, baking powder, and salt in a medium bowl and set aside.
  2. In a small bowl, mix instant coffee granules with vanilla extract until dissolved.
  3. In a large bowl, beat melted butter and brown sugar until smooth and creamy; mix in the egg and coffee mixture.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Chill the dough covered in the refrigerator for 30 minutes.
  6. Roll the chilled dough into small balls and coat them in granulated sugar and powdered sugar.
  7. Bake on a parchment-lined baking sheet at 350°F (175°C) for 10 to 12 minutes.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For additional flavor, chill the dough longer or add nuts or chocolate chips. Check for doneness at the 10-minute mark.
