Cheesy Chicken Rice

A comforting and savory dish featuring tender chicken, fluffy rice, and a creamy cheese sauce.

  • 2 cups long grain white rice (Basmati)
  • 2 tablespoons avocado oil
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 1 packet Sazon seasoning
  • 1 tablespoon chicken flavored bouillon
  • 16 ounces tomato sauce
  • 4 cups water
  • 2 pounds boneless skinless chicken breasts or thighs
  • 2 tablespoons butter
  • 2 tablespoons avocado oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 12 ounces evaporated milk
  • 16 ounces Queso Blanco Velveeta, cubed
  • 7 ounces diced green chilies
  • 8 ounces grated pepper jack cheese

Instructions

  1. Heat 2 tablespoons of avocado oil in a skillet over medium-high heat and toast 2 cups of rice for 3-4 minutes.
  2. Add diced onion and minced garlic, sauté for 2-3 minutes.
  3. Stir in Sazon seasoning, chicken bouillon, tomato sauce, and water. Bring to a boil, cover, and simmer for 15 minutes.
  4. Remove from heat and let rice sit covered for 15 minutes, then fluff with a fork.
  5. Slice chicken and heat butter with 2 tablespoons avocado oil in another skillet, then add chicken and spices. Cook for 4-5 minutes until browned.
  6. In a saucepan, combine evaporated milk, Velveeta, green chilies, and pepper jack cheese over medium heat, stirring until melted.
  7. Serve the rice topped with chicken and cheese sauce.

Notes

Toast the rice beforehand for enhanced flavor. Let the rice rest to achieve fluffiness. Ensure chicken reaches an internal temperature of 165°F (75°C).
