Cheesy Chicken Avocado Wrap

A delightful blend of flavors featuring creamy avocado, seasoned chicken, and melty cheese wrapped in a soft tortilla, perfect for a quick lunch or dinner.

  • 2 large flour tortillas
  • 1 ½ cups shredded chicken
  • 1 ripe avocado, diced
  • ½ cup shredded cheddar cheese
  • ¼ cup shredded Monterey Jack cheese
  • ¼ cup fresh cilantro, chopped
  • ¼ cup diced tomatoes
  • ¼ cup red onion, finely chopped
  • ¼ cup sour cream
  • 2 tbsp chipotle sauce
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter

Instructions

  1. Season and sauté the chicken: In a bowl, combine shredded chicken with chipotle sauce, smoked paprika, garlic powder, cumin, salt, and black pepper. Heat olive oil in a pan over medium heat, add chicken, and sauté for about 3-4 minutes until warm.
  2. Prepare the tortillas: Lay tortillas on a clean surface, spread sour cream over each, and sprinkle with cheddar and Monterey Jack cheeses.
  3. Add the fillings: Place sautéed chicken in the center of tortillas, top with avocado, tomatoes, red onion, and cilantro.
  4. Wrap it up: Fold sides of tortillas inward and roll tightly from the bottom to the top.
  5. Grill for perfection: Heat a skillet over medium heat, melt butter, and grill wraps seam-side down for about 2-3 minutes per side until golden brown.
  6. Serve and enjoy: Slice wraps in half and serve warm with extra chipotle sauce or sour cream on the side.

Notes

For extra flavor, marinate chicken in chipotle sauce for an hour. Add black beans or corn for variations.
