Cheesy Beef Enchiladas Tortellini

A delightful fusion of beef enchiladas and cheese tortellini that offers a satisfying meal bursting with flavor.

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • ½ cup sour cream
  • Olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté the diced onion for 3-4 minutes until translucent.
  3. Add minced garlic and sauté for another minute.
  4. Cook the ground beef, breaking it apart with a spatula until browned (about 5-7 minutes).
  5. Stir in black beans, diced tomatoes, and taco seasoning. Simmer for 5 minutes.
  6. Simultaneously, cook the cheese tortellini in a large pot of salted boiling water according to package instructions (approximately 3-5 minutes). Drain and set aside.
  7. Preheat your oven to 350°F (175°C).
  8. Mix the cooked tortellini with the beef mixture in the skillet.
  9. Spread a layer of enchilada sauce on the bottom of a baking dish.
  10. Layer the tortellini mixture on top of the enchilada sauce.
  11. Pour remaining enchilada sauce over the top and sprinkle with shredded cheddar cheese.
  12. Cover with foil and bake for 20 minutes. Uncover and bake for an additional 10-15 minutes until cheese is melted and bubbly.

Notes

For extra flavor, consider using fresh garlic and high-quality spices. Add diced jalapeños for spice, or swap beef for turkey or a plant-based substitute.
