Caramelized Sweet Potato Bites with Marshmallows and Pecans

Delightful caramelized sweet potato bites topped with gooey marshmallows and crunchy pecans, perfect for family gatherings or as a delicious snack.

  • 3 large sweet potatoes
  • 4 tablespoons unsalted butter
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare your baking sheet by lining it with parchment paper or lightly greasing it.
  2. Add cubed sweet potatoes to a large mixing bowl. Pour melted butter over them and sprinkle with brown sugar, cinnamon, nutmeg, and salt. Toss until well-coated.
  3. Lay the coated sweet potato pieces in a single layer on the prepared baking sheet.
  4. Roast for 25–30 minutes, flipping halfway through, until edges are golden brown and sweet potatoes are tender.
  5. Remove from the oven, top with chopped pecans and mini marshmallows, then return to the oven for an additional 4–5 minutes until melted.
  6. Serve warm directly from the pan or transfer to a serving platter.

Notes

For enhanced caramelization, use fresh sweet potatoes. Consider adding vanilla extract for extra flavor.
