Caramelised Pear & Gorgonzola Tart

A delightful tart that combines the sweetness of caramelised pears with the bold flavors of Gorgonzola cheese, all on a flaky puff pastry crust.

  • 1 sheet of puff pastry (thawed)
  • 3 medium Bosc pears (sliced)
  • 4 oz Gorgonzola cheese (crumbled)
  • 1/2 cup brown sugar
  • 3 tbsp unsalted butter
  • 2 tsp fresh thyme leaves
  • 2 tbsp balsamic glaze (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a parchment-lined baking sheet.
  3. In a skillet, melt the butter over medium heat, add the sliced pears and brown sugar, and simmer for 8-10 minutes.
  4. Sprinkle crumbled Gorgonzola and fresh thyme over the caramelised pears and cook for an additional 2 minutes.
  5. Spoon the pear mixture onto the center of the pastry, leaving about an inch around the edges.
  6. Fold the pastry edges slightly inward to create a border.
  7. Bake for 20-25 minutes, or until the pastry is golden brown and puffed.
  8. Drizzle with balsamic glaze before serving.

Notes

Use ripe pears for maximum sweetness, and feel free to experiment with different cheeses.
