Candy Cane Pie

A delightful holiday dessert featuring a creamy filling, crushed candy canes, and a rich chocolate crust.

  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 1/4 cups confectioners’ sugar (divided)
  • 1/2 cup unsalted butter, softened
  • 1 1/3 cups heavy cream (divided)
  • 1 tsp peppermint extract
  • 1 (3.9 oz) box vanilla or white chocolate instant pudding mix
  • 3/4 cup whole milk
  • 2 tsp unflavored gelatin
  • 2 tbsp cold water
  • 1/2 cup crushed candy canes or peppermint candies
  • 1/4 cup mini chocolate chips
  • 4.5 oz white chocolate chips or chopped white chocolate
  • 1/4 cup heavy cream (for ganache)
  • 1.5 oz melted semi-sweet chocolate (for drizzle)
  • Extra crushed candy canes (for garnish)
  • Festive sprinkles or snowflake decorations

Instructions

  1. Prepare the Crust: Pulse the Oreo cookies in a food processor until finely crushed. Combine with melted butter and press into a 9.5-inch tart pan. Freeze for 20 minutes.
  2. Whip the Cream: Whip cold heavy cream until soft peaks form. Gradually add half of the confectioners’ sugar and peppermint extract, then whip to stiff peaks. Chill.
  3. Mix the Cream Cheese and Butter: Beat softened cream cheese and butter until creamy. Add remaining confectioners’ sugar and mix until smooth.
  4. Bloom the Gelatin: Combine gelatin with cold water in a bowl and let bloom for 5 minutes. Melt and let cool slightly.
  5. Prepare the Pudding: Whisk pudding mix with whole milk until thickened and combine with cream cheese mixture.
  6. Combine the Mixtures: Gently fold in whipped cream and melted gelatin. Stir in crushed candy canes and mini chocolate chips.
  7. Fill the Crust: Spread filling into the Oreo crust. Cover and refrigerate for at least 5-6 hours or overnight.
  8. Prepare the Ganache: Pour hot cream over white chocolate chips, stirring until smooth. Cool slightly and spread over filling.
  9. Add Toppings: Drizzle melted semi-sweet chocolate on top, pipe remaining whipped cream, and finish with crushed candy canes and sprinkles.

Notes

Ensure the cream cheese is at room temperature for smoother mixing. For best results, chill bowls before whipping cream.
