Buffalo Chicken Pasta Shells

A delicious and easy dinner featuring jumbo pasta shells stuffed with spicy Buffalo chicken and topped with cheese.

  • 2025 jumbo pasta shells (cooked al dente)
  • 2 cups shredded chicken (rotisserie or cooked breast)
  • 1 cup Buffalo Sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup blue cheese crumbles (optional)
  • 2 green onions, diced (optional)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup freshly chopped parsley
  • 1 cup blue cheese or ranch dressing (for dipping)
  • Extra chopped parsley (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook pasta shells according to package instructions until al dente, then drain and set aside.
  3. In a mixing bowl, combine the shredded chicken, Buffalo sauce, ricotta cheese, half of the mozzarella, cheddar, garlic powder, onion powder, and black pepper. Mix until creamy.
  4. Generously stuff each shell with the chicken mixture and place them in a greased baking dish opening side up. Top with remaining mozzarella and optional blue cheese crumbles.
  5. Bake in the preheated oven for 25-30 minutes, until heated through and cheese is bubbly.

Notes

For extra heat, add more Buffalo sauce to the filling. This dish can be made ahead of time and frozen before baking.
