Broccoli and Cheese Stuffed Chicken

A delightful dish featuring chicken breasts stuffed with a savory filling of broccoli, Colby-Jack cheese, and red bell peppers, perfect for family dinners.

  • 4 large boneless skinless chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1½ cups small-diced broccoli florets, blanched and patted dry
  • ¼ cup finely diced red bell pepper
  • 1â…“ cups shredded Colby-Jack cheese
  • 1½ tablespoons mayonnaise
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut a pocket lengthwise into each chicken breast without slicing all the way through.
  3. Mix salt, smoked paprika, garlic powder, onion powder, and black pepper in a bowl; rub it on the chicken.
  4. In another bowl, combine blanched broccoli, red bell pepper, cheese, mayonnaise, and 1 teaspoon of seasoning blend to make the filling.
  5. Stuff each chicken breast with a quarter of the filling and secure with toothpicks.
  6. Heat olive oil in a skillet over medium-high heat, sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to the oven and bake for 18-20 minutes or until the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes before serving.

Notes

For added flavor, marinate chicken in olive oil and lemon juice before stuffing. You can add cooked quinoa or rice to the filling or broil for a crispier finish.
