Blueberry Breakfast Quesadillas

Delightful quesadillas filled with gooey cheese and fresh blueberries, perfect for a quick breakfast.

  • 4 medium flour tortillas
  • 1 cup shredded mozzarella cheese (or Monterey Jack)
  • 1 cup fresh blueberries
  • 1 tablespoon butter
  • 1 tablespoon honey (optional, for drizzling)
  • Fresh cilantro for garnish

Instructions

  1. Lightly butter one side of each tortilla.
  2. Heat a skillet over medium heat and place one tortilla, butter side down.
  3. Sprinkle shredded cheese over half of the tortilla and top with fresh blueberries.
  4. Fold the tortilla in half and cook for 2–3 minutes per side until golden and cheese is melted.
  5. Repeat with remaining tortillas. Slice into wedges, drizzle with honey, and garnish with cilantro.

Notes

Use fresh blueberries for the best flavor. For a cozy twist, add a sprinkle of cinnamon to the cheese mixture.
