Blackberry Goat Cheese Puff Pastry

An elegant appetizer or charming dessert that combines the rich flavors of goat cheese and sweet blackberries in a flaky puff pastry.

  • 2 sheets frozen puff pastry, thawed
  • 2 cups fresh blackberries
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 3/4 cup granulated sugar
  • 8 ounces goat cheese, softened
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 large egg, beaten

Instructions

  1. In a medium saucepan over medium heat, combine the fresh blackberries, water, lemon juice, and granulated sugar. Cook for 20 to 30 minutes until the mixture thickens into a rustic jam. Let cool to room temperature.
  2. Roll each thawed puff pastry sheet into a large rectangle on a floured surface.
  3. Spread half of the softened goat cheese on each pastry sheet, then top with half of the cooled blackberry jam.
  4. Cut each filled pastry sheet into 6 strips lengthwise and twist each strip to create spirals.
  5. Mix the lemon zest, raw sugar, and minced thyme. Sprinkle this mixture over each pastry twist.
  6. Brush the twists with beaten egg and arrange them on a parchment-lined baking sheet.
  7. Bake in a preheated oven at 400°F (200°C) for 16 to 18 minutes until golden brown. Cool on a wire rack before serving.

Notes

Ensure puff pastry is adequately thawed. Use seasonal blackberries for optimal flavor and don’t skip on lemon zest and thyme for enhanced taste.
