Bang Bang Salmon Bites Bowls

Indulge in crispy salmon bites draped in a creamy Bang Bang sauce, nestled on a bed of fluffy rice and fresh veggies for a colorful meal.

  • 1 lb fresh salmon, skinless and cut into bite-sized cubes
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or cooking spray
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey (optional)
  • Juice of 1/2 lime
  • 2 cups cooked jasmine rice or cauliflower rice
  • 1 cup shredded purple cabbage
  • 1 avocado, sliced
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • Fresh cilantro
  • Sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C) or air fryer to 390°F (200°C).
  2. Toss salmon cubes with garlic powder, smoked paprika, salt, and black pepper in a mixing bowl.
  3. Coat each salmon cube with panko breadcrumbs.
  4. Arrange the salmon on a parchment-lined baking tray or in your air fryer basket.
  5. Bake for 12-14 minutes or air fry for 8-10 minutes, flipping halfway through.
  6. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and optional honey for the Bang Bang sauce.
  7. Layer cooked jasmine rice or cauliflower rice in serving bowls.
  8. Add shredded cabbage, followed by sliced avocado and carrots.
  9. Top with crispy salmon bites and drizzle with the Bang Bang sauce.
  10. Garnish with sliced green onions, fresh cilantro, and sesame seeds. Serve immediately.

Notes

Ensure to preheat the appliance for crispy salmon. You can prepare components ahead but assemble just before serving for freshness.
