Baked Apple Fritters

  • 4 medium apples (Granny Smith, Honeycrisp, or Fuji), peeled, cored, and diced
  • 2 tablespoons granulated sugar (for apples)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar (for batter)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Vegetable or canola oil (for frying, about 4-6 cups)
  • 2 cups powdered sugar (for glaze)
  • 46 tablespoons milk (or apple cider, for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. In a medium mixing bowl, combine the diced apples with 2 tablespoons of granulated sugar, ground cinnamon, nutmeg, and lemon juice. Set aside.
  2. In a large mixing bowl, whisk together flour, 2 tablespoons sugar, baking powder, baking soda, and salt. In another bowl, whisk egg, buttermilk, melted butter, and vanilla extract. Pour wet ingredients into dry ingredients and stir until combined. Fold in apple mixture.
  3. Heat oil to 350°F in a deep skillet. Drop spoonfuls of batter into hot oil, frying 2-3 minutes on each side until golden brown. Drain on paper towels.
  4. In a bowl, whisk powdered sugar, milk (or apple cider), and vanilla extract until smooth and adjust consistency as needed.
  5. Dip warm fritters into the glaze or drizzle it over the top and serve warm.

Choose tart apples like Granny Smith for the best flavor and maintain oil temperature for crispy fritters.
