Avocado Toast with Feta and Cherry Tomatoes

A delightful dish combining creamy avocados, tangy feta cheese, and sweet cherry tomatoes, perfect for breakfast or a light snack.

  • 2 ripe avocados
  • 4 slices of whole-grain bread
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Toast the slices of whole-grain bread until golden brown.
  2. In a mixing bowl, cut and mash the avocados, adding lemon juice, salt, and pepper.
  3. In another bowl, mix the cherry tomatoes with olive oil, salt, and pepper.
  4. Spread the avocado mixture over each toasted slice.
  5. Sprinkle crumbled feta cheese on top.
  6. Add the cherry tomato mixture on each slice.
  7. Garnish with fresh basil leaves.
  8. Serve immediately and enjoy.

Notes

For a delicious twist, consider adding balsamic glaze or red pepper flakes. You can also replace feta with goat cheese or ricotta for added flavor.
