Addicting Toffee Chex Mix

A delightful mix of crunchy pretzels, crispy Chex cereal, and nutty morsels coated in a rich toffee glaze, perfect for sharing.

  • 12.8 oz box rice or corn Chex cereal
  • 3 cups assorted nuts (such as pecans, almonds, or peanuts)
  • 3 cups pretzel thins or mini pretzels
  • 1 cup unsalted butter
  • 2 cups dark brown sugar
  • 3/4 cup light corn syrup
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking soda

Instructions

  1. Preheat the oven to 250°F (120°C).
  2. Line two baking sheets with foil and lightly coat with nonstick cooking spray.
  3. In a large mixing bowl, combine Chex cereal, assorted nuts, and pretzels.
  4. In a medium saucepan over medium heat, melt the unsalted butter.
  5. Gradually stir in dark brown sugar, light corn syrup, and salt until it reaches a boil.
  6. Boil for 2 minutes, stirring constantly to prevent burning.
  7. Remove from heat and stir in vanilla extract and baking soda.
  8. Pour toffee over the cereal blend and fold to coat.
  9. Spread mixture evenly on prepared baking sheets.
  10. Bake for 30 to 55 minutes, stirring every 15 minutes.
  11. Cool on baking sheets, stirring occasionally to prevent clumping.

Notes

For a chewier texture, opt for a shorter bake time. Store in an airtight container to maintain crunch.
